
Our story

Ultramarinos Marín was born in Barcelona with a simple idea: to bring back the timeless neighborhood bar and prove that true luxury lies in exceptional ingredients, craftsmanship, and genuine hospitality. On 15 October 2026, that same philosophy arrives in Madrid, preserving the spirit of the original house: a lively bar, a plancha that never stops, an honest menu, and a kitchen where technique is always in service of the ingredient—not the other way around.
Here you’ll find market-fresh produce, seafood sourced from some of Spain’s finest fishing ports, house-made cured meats and sausages, wines from small, low-intervention producers, perfectly poured beers, and a seasonal selection of preserves, escabeches, and other in-house preparations. The cooking is straightforward and unpretentious, allowing every ingredient to speak for itself.
Leading the kitchen is chef Borja Ordoño, whose career has taken him through some of the world’s most celebrated restaurants, including Etxebarri, Alain Ducasse, and Noma. After years of learning from the very best, he returned to Barcelona to create a restaurant that celebrates tradition through a contemporary lens: cooking with absolute respect for the product, making everything possible from scratch, and letting honest flavors take center stage.
Ultramarinos Marín Madrid is, above all, a place to eat exceptionally well, drink even better, and stay longer than you planned. A place where the plancha is the heart of the house and every service is a celebration of honest cooking—food that doesn’t need to impress because it speaks for itself.

An iconic location for our Madrid space.
On the corner of Manuela Malasaña and San Andrés, in the heart of Madrid’s Malasaña neighborhood, stands a venue with more than fifty years of history. Opened in 1975, it began its life as a traditional tapas and wine bar, later becoming La Templá before spending decades as Casa Maravillas—one of those beloved bars that has become part of the neighborhood’s collective memory and Madrid’s tapas culture. We have preserved its original hydraulic tile floors, its iconic wood-and-marble bar, and the timeless castizo character that has welcomed generations of locals and visitors alike.
Before Ultramarinos Marín, this room had already become part of visual culture. In 2010, Annie Leibovitz transformed it into the setting for Louis Vuitton’s iconic campaign featuring Pelé, Diego Maradona and Zinedine Zidane. Today, a new chapter begins.

We offer market produce, precise cooking and a menu that changes with whatever is worth cooking.
Seafood and fish chosen at Spain’s main ports sit alongside meat and seasonal vegetables, all elevated by the house’s repertoire of garums, preserves, and sauces.


The cook behind the bar
Borja García Ordoño
Borja García Ordoño was born in Vitoria in 1986. He worked in the kitchens of Alain Ducasse, Noma and Asador Etxebarri, as well as Ryugin, Sergi Arola, Quique Dacosta and Dos Palillos, before landing in Barcelona as head chef of Dos Pebrots.
When he opened Ultramarinos Marín he chose the format furthest from the chef’s restaurant: a bar. The decision did not lower the culinary ambition; it moved it. The haute cuisine is in the knowledge and the execution, not in the ceremony.

Gonzalo Guzmán
Trained alongside Borja Ordoño at Ultramarinos Marín Barcelona and, before that, at three-starred Disfrutar. He leads a young, diverse brigade, with backgrounds and accents from all over the map.
Head sommelier
Jenner Bardales Cárdenas
Peruvian-born and based in Madrid, he has built his career between the dining room and the cellar of restaurants including La Guisandera de Piñera, Zalacaín and Urrechu. In 2026 he joins Ultramarinos Marín Madrid to build a cellar in constant conversation with the kitchen.
The wine list brings together around 80 references: Spanish and international wines, small vineyards, limited productions and low-intervention bottles, alongside more classic names. A cellar that is alive, accessible and curious.
Our companions
We don’t surround ourselves with suppliers but with travelling companions: sustainable projects that share our way of working, most of them based in Madrid, because surroundings, tradition and closeness matter too. And of course, we couldn’t open in Madrid without Mahou.
